What you need
3⁄4 cup 100 percent whole-grain fl our
1 teaspoon baking powder
1⁄4 teaspoon salt (optional)
1 packet zero-calorie artifi cial sweetener
1 24-gram scoop unfl avored whey protein powder
1⁄2 cup skim milk
2 egg whites
Zero-calorie nonstick cooking spray

Directions
Place fl our, baking powder, salt, sweetener, and protein powder in a large bowl. Mix by hand. Add milk and egg whites in that order, mixing by hand after each addition. Set the mixture aside. Drop by scant 1⁄4 cups onto a nonstick skillet coated with cooking spray, heated to medium-low. Once pancakes have bubbles that are beginning to pop, fl ip and cook until just browned on the other side.

Makes 2 servings and takes less than 10 minutes to prepare
