Mexican Scrambled Omelet
What you need
4 ounces extra-lean ground turkey breast
5 egg whites
1⁄4 cup salsa or picante sauce
1 cup mixed red and green peppers and mushrooms
1⁄2 cup cooked brown rice
1⁄2 teaspoon chili powder
Directions
Use a nonstick frying pan or spray zero-calorie nonstick spray on a regular frying pan. Divide ground turkey breast into little balls or bits. Add egg whites, salsa, vegetables, rice, and chili powder with turkey in the pan. Heat on medium setting on the stove, and mix periodically with a wooden spoon until eggs begin to brown and turkey is cooked (pink color disappears). Sometimes it’s a good idea to cook the turkey bits beforehand, but it’s usually not necessary. Remove from stove and put on a plate.
Makes 1 serving and takes less than 5 minutes to prepare (time estimate is based on using precooked brown rice)
